Side recipes

I want to expand on the current sides I make. I'll give anything a try but would particularly like a mushroom, spinach, or green squash recipe. TIAChat Icon !

Roasted tomatoes:

Buy one tomato per person, clean and cut stem out of top (I usually scoop a little more out).

Put about 1 tbls pesto sauce in scooped out part. Put gorgonzola or feta cheese in (however much/little you want).

Bake 400f for 40-45 minutes.

I keep a jar of pesto and a container of cheese in my fridge all the time, so I can make these whenever I want. SOOO easy. I serve it in its own bowl since it lets out a lot of juice.

Roasted asparagus:

chop off ends of asparagus
lay in baking sheet, sprinkle 1-2 tbls Extra Virgin Olive Oil, shake the pan so they all get oiled, sprinkle with garlic powder
Bake 40 minues, 400f.
Sprinkle 1-2 tbls balsamic vinegar over and serve hot.

Not what you asked for but I consider this a 'different' side dish.

Baked creamed pearl onions

I made this for Easter and it was delicious...

Tips:

- I used frozen pearl onions but I let them thaw in a colander first (I couldn't find fresh ones at my supermarket and was on a time crunch).

- After baking, I mixed it again to distribute the crushed crackers (I used Ritz).

- Next time I would prob add about 2 Tbsp more cream and about 1/2 cup less crushed crackers.

Overall - the taste itself was delicious and I will definitely make it again!!!

how about acorn squash.
Cut them in half
place cut side down on a cookie sheet.
I bake at about 350 for around 40 min.
or until the outside gets a little soft.
add butter and cinnamon
or just butter and whatever spice you like. They are very yummy!!!

I love marinating squash or zucchini in lt italian dressing or a drizzling a little olive oil, salt, pepper an italian seasoning an grilling them! So good!


heres a good mushroom & spinach recipe!
3 tablespoons butter
2 large portobello mushrooms, sliced
2 bags or fresh spinach
1/4 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon black pepper
2 clove garlic, chopped
2 tablespoons dry red wine
1/4 cup grated Parmesan cheese


DIRECTIONS
Melt butter in a large skillet or saute pan over medium heat. Saute mushrooms, spinach, basil, salt, pepper and garlic until mushrooms are tender and spinach is heated through.
Pour in wine and reduce heat to low; simmer 1 minute. Stir in Parmesan cheese and serve.
