Shameless Bragging
Just very proud of myself - DH just told me that my roast chicken tonight was the best he ever tasted and it was one of the best meals of his life. The sides were roasted asparagus and sauteed green beans w/garlic and onions.

I did my usual, only this time I didn't even have any fresh herbs. Just thought since I complain about DH all the time, he deserved some props - usually his response mirrors your family's to the breakfast you cooked!!!
The only thing I guess you could call special I do is I make a mix of olive oil, salt, pepper, fresh garlic, and herbs (I used mixed dried like italian seasoning, etc.) Usually I use fresh sage, rosemary, and/or time. I rub this inbetween the skin and the chicken breast before cooking. I also rub it on the outside of the skin. Make sure the skin is dried off with a paper towel before doing this.
Also, I cook the chicken on 400 for about 20 - 30 mins depending on the size of the bird and then drop it down to 350 until it is cooked. This gives the skin a nice brown and crisp coloring. It also seals in the juices.
I stuff the cavity of the bird with a few lemon wedges, quartered onion, and garlic cloves. This seasons the meat as it steams.
The other thing I do is "make" a baking rack out of 2 celery stalks and 2 carrot stalks. This seasons the juices that fall into the pan and helps with gravy or whatever you use the juices for (ie. soup).
