Re: Sauce -
you can use any ground meat. if he likes ground pork, use ground pork. or maybe half pork half sausage. just make sure you get it nice and brown. you can use a potato masher to separate it up in the pan.

Re: Sauce -
I always use meatballs in my sauce (beef, pork, veal combo) but if he doesn't like meatballs, you can omit them. I also always add hot italian sausage and usually pieces of pork (on the bone), but sometimes, I'll use braciole instead of pork ribs. I brown all the meat in a frying pan first with some EVOO, garlic cloves and an onion. I do not cut the onion up, just cut both ends off and peel of paper skin. I use 3 large cans of sauce...2 cans of crushed tomatoes and 1 can of tomato sauce. After meat is all browned, I add it to the sauce with the whole onion and add fresh basil leaves. I let it cook on low for several hours. The longer it cooks, the better IMO.

Re: Sauce -
I always use pieces of lamb on the bone, italian sausage and meatballs that are made with a pork/veal/beef mix. Lamb gives sauce a ton a flavor!

Re: Sauce -
Do you want meat sauce or a more basic red sauce?
I like the flavor meat gives the sauce. So this is the basic recipe I use but will add meat to it. Either browned meatballs or sausage, ribs etc.
Heat a little olive oil in bottom of pot. Add 3-4 thinly sliced garlic cloved and 1 chopped onion. Don't brown ... cook til translucent. Add 3 cans of crushed tomato (i use red pack or tuttorosso) and 1/2 can water. Let cook for a few hours. At the end i add some parsley.
