Roasted red potatoes?

Can I prepare these the night before and let them sit in a ziploc bag in the fridge?

Do you mean.. just douse them in oil and herbs and let them stay until ready to roast?

If so.. I don't see why not.

OR

Do you mean.. roast them and then sit them in a bag overnight?

If so.. I don't know.. one of the things I like best about roasted potatoes is the crisp skin and buttery insides.. that might be lost if it sits in the fridge..

What if you par-boil them the night before, add them to a bag w/ herbs and oil then just finish roasting/cooking the next night - they won't take as long and you'll still have the crisp skin.

I have had mixed success with leftover cooked potatoes.

Sometimes the refrigeration causes them to get hard - almost like they weren't cooked all the way. Chat Icon

other times they are ok - yes they do loose some crispness on the outside but overall still okay to eat.

If possible, I would just roast them fresh - it only takes 15 mins if you cut them small.

I nuke my potatoes before roasting them instead of boiling them. Kinda speeds up the process. Will that help you from a timing perspective? Start to finish is about 30 mins.
