Risotto
What kind of rice do I use?
The recipe calls for Arborio rice but I can't find it.

I'm pretty sure you can only use arborio. I usually buy it in a blue box with a window on the front (not sure the brand) or in a clear canister.

You can also use Carnaroli and Vialone Nano rice. Arborio is usually the easiest to find and least expensive tho. If you can't find it in the pasta or rice aisle at the supermarket, try an Italian specialty store, if there are any near you.
These types of rice have certain properties that essentially 'make' the risotto.
