Re: Rice Pilaf
Here's how i do it..
I start to toast a handful of Orzo (or broken up pieces of other pasta) in a little olive oil and butter. After about 30 seconds I add about a half cup of onion (give or take) - chopped very small. When onions start to become soft and pasta starts to give off that toasted scent (NOT BURNT) - I throw in a cup of rice and a Tablespoon (about) of Chicken base (I use this instead of salt.. so you need to add more if you like it salty.. less if you are going for a more pure flavor. Add about 2 cups of Chicken Stock to the pot and bring it to a boil. Once it hits a boil, reduce heat to low and cover. Let it cook for about 15 minutes. Uncover - it should still have some water in there - that's what you want. I then add some grated carrots, a handful of frozen peas and a few good turns of fresh ground black pepper and give it a stir. Cover it back up and let it simmer another 5 minutes.. until water is all absorbed.
If you want 'beef flavor' - replace the chicken stock and base with beef base and beef stock!
