Red potatoes
Need a really good recipe other than roasting with EVOO, S&P and rosemary.

We roast them in the oven with chipotle pepper. It gives them a nice kick!

for baby red potatoes cook in water that has boiled 15 minutes, let them cool for a few minutes, cut in half, scoop middles out and coat the 'skins' with butter, a crushed clove of garlic s/p and bake for 10 minutes, and fill with a mix a of : gorgonzola or bleu cheese, 1/4 of a block of cream cheeese and half a cup of sour cream put back in oven until golden brown...Ive skipped the 'skins' bake when I am in a crunch for time, i just prefer the skins be a little cruncy,
You can also just make regular red potatos and cook like you would mashed potatoes, mix them up with the same ingredients as above and put them in a pie plate and broil the top until golden. (ive also done this with steam/boiled cauliflower)
potatoe hash: cut up potatoes and cook with peppers and onions, s/p, paprika, crushed red pepper. great as 'homefries' for breakfast or a side dish at dinner....i usulaly poke a few holes in the potatoes before cutting them and pre cook them in the microwave a few minutes.
potatoe latkes....grate 2 lbs of potatoes a large onion, half a block of cheddar (cheese is optional) mix with two eggs, s/p, a few tsps of corn starch or flour you can fry in oil or bake on the pampered chef.
roast in the oven with just olive oil and coat with white wine vinegar and sea salt...tastes liek salt and vinger chips.
