Really dumb question re: grilling and roasting veggies
Seriously dumb question.
To grill veggies, do you just cut and grill? Or do you season them with something?
I assume if I wanted to roast them, I would drizzle with EVOO and maybe salt & pepper? Or just EVOO?
What can I make grilled or roasted? I was thinking green and red peppers, maybe mushrooms. I could roast potatoes, probably not grill I don't think.
What else? DH and I are trying to eat healthier and be a good example to DS at the same time, but all we do now is boil mixed veggies (broccoli, cauliflower, carrots) and it gets BORING.
Any tips are appreciated. I know this is cooking 101, but we are self taught and don't know all that much about cooking, haha. Thanks!

My fav to grill are corn (not so healthy), squash, eggplant, asapargus, zucchini, tomato and onion.
I usually just add olive oil and salt.

There's no way I'm turning the oven on in the summer so almost all our veggies go on the grill. Olive Oil, salt, pepper, and garlic is all I need. Most of the time I just throw them into a grill pan, but if I'm concerned about burning or falling through then I wrap them up in tin foil pouches. As far as potatoes go, they can take forever to cook on the grill so I usually pre-cook them in the microwave and then put them on the grill.

Sometimes I cheat, and I would cut up veggies like onions, brocolli, sugar snap peas.. whatever I have on hand, and sear it, and cook it the pan I made my main dish. Like if I was cooking chicken and rice as a one pot meal, after I transfer into another bowl, sprinkle some water, add the veggies and put the lid on it. Once its cooked, I add a tad bit of evoo to sear it.

Not dumb at all! I'm a rookie too but here's what i do with asparagus. I toss them in some olive oil and then put the on the grill. Grill a few minutes only and then sprinkle some kosher salt and pepper on them. Done! And tasty with a steak!

I either do a sautee or roast my veggies. I don't have access to a grill.
DH is picky about veggies, so my rotation is limited to eggplant, zucchini, summer squash, tomatoes, onions, mushrooms, string beans and corn.
Toss veggies with a little EVOO, fresh or dried herbs, S&P and good to go. Roasted string beans with garlic is my fav. Roasted cherry tomatoes - toss with EVOO, salt, sliced garlic, rosemary and thyme, roast about 30 minutes at 400. So yummy. We use this on fish or toss with pasta.

I slice them the long way. I spray evoo. Season on both sides with sea salt, pepper and italian herbs. Simple and delish!
I usually use yellow squash, zucchini and eggplants to grill

zucchini on the grill with season salt and evoo, my favorite!
roasted corn!
You can roast everything on the grill. I make a tin foil pouch and throw it on!

I spray the grill with non stick spray. i only season my veggies with salt and pepper then put them on the grill.
When roasting veggies I use EVOO, salt and pepper.

My oven does not go on in the summer.
Get a grill pan for the BBQ. Cut up your veggies and toss with olive oil, salt & pepper. I like- peppers (red/green), eggplant, onion, zucchini, tomatoes, mushrooms, asparagus, broccoli..any mixture of these. When they're done (and they can take a while!) I throw them in a bowl with some balsamic vinegar. SO YUMMY. Dh will sometimes make a foil pack instead of the grill pan, but they come out more steamed this way and I like crunchy veggies.
I have had potatoes on the grill..they're very good. Use small ones, so they cook faster.
There is also corn! I like to make a paste of teriyaki sauce & garlic and brush that on them, wrap in foil & grill.

Thanks everyone! We are in an apartment so I should have said we're using a grill PAN on the stove, not an actual grill. Not sure if that makes a difference???
And here's another DUMB question. Veggies like eggplant, zucchini, etc. Do I just slice and grill? Or do they have to be peeled Dumb, I know. But like I said, we are very limited with the veggies we eat right now.

grill pan works great indoors and i live an apt.. you get the marks but of course, the flavor of the open fire roasted won't be there but honestly it doesn't matter. On weeknights, when I'm doing things quick, it just helps to have everything around me.
And you don't have to peel eggplant and zucchini.. if you slice it really thin, the skin forms a nice crust! You could also slice zucchini really really thin, toss with some lemon juice, evoo, s&p and eat it raw.. kind of like a carpaccio.
