Rainbow Cookie Ladies...
How do you cut them without cracking the chocolate?

Cut a strip then turn it on it's side and cut them into squares. It helps with the cracking

Doesn't that make it impossible to get the chocolate on? I usually melt it and then spread it across the whole brick of cookies...

Yes. My MIL makes these every year... and I was like "gee MIL, shouldn't we just cut them first and then coat it in the chocolate"... she SHOWED me!! She let me do it like that and boy was it 100X harder and messier and it ended up with less chocolate per piece. They looked so much nicer when we did it the normal way. Hers usually crack a little, but she says you need a big, sharp knife. She cuts them in strips then takes the strips and turns them on the side and cuts pieces that way.

Make sure the chocolate is completely cooled and then cut the cookies with a sharp, warm knife. I usually wipe off the knife and then run it under hot/warm water before making each cut.

It is harder and takes a lot more time and chocolate, but I prefer to do it that way and not have cracked chocolate
I've also heard of cutting the brick into slices and covering each slice and then cutting into pieces after it's cooled.

I pour the chocolate on, wait a minute or 2, then score it with a knife. Place it in the fridge and then when fully firm, I cut on the scored lines. Works perfectly
