Question about freezing/refreezing
I know once you defrost something you shouldn't refreeze it, but what do you think in this situation?
I had shredded buffalo chicken in my freezer. I let it defrost and used it in mac and cheese which was then baked. Is it a bad idea to freeze the leftovers?

In this case, I don't think anything bad will happen - since the food was cooked, from a health standpoint, you should be fine.
You might sacrifice some flavor doing this but it should be fine to eat.
I think the real harm is defrosting raw meat and then refreezing it.
I have definitely defrosted a whole chicken, roasted - added to soup and then frozen the soup. Nothing bad happened to me. :)
