Primer - how many coats?
Do I need to put a second coat if the paint underneath is still showing through in some areas?

We used two coats of primer on everything, but had some hard colors to cover. (Army camouflage green in the MBR, for example). If you're covering a light pastel, you might be able to get away with one coat.

you only need one coat of primer. Then 2 coats of your color paint. Even if the old color is comign through a bit the 2 new color coats will cover

if the wood is still showing through more then 30% you should use a 2nd coat. it will help with peeling. if the paint is only sticking to a thin nearly gone layer of primer, it could peel.
ETA- are you painting walls? if so you don't need more then 1 coat unless its a REALLY dark color
if your painting furniture, my peeling info applies.
