Potluck help!
I'm having a potluck next week and I need to make a side dish. Can you suggest something that is:
1. Safe for pregnant women to eat 2. Can be made the night before.
Thanks!
P.S. Please not pasta salad because I made that for my last potluck.

what about some roasted veggies? roasted potatoes, onions, carrots, peppers-just toss everything with some olive oil, salt and peppers and bake on a cookie sheet at 450 for 35-40 minutes...then you reheat them the next day.
You can prep everything the night before, peel and cut the potatoes, same with the carrots, etc...toss them with the olive oil and seasonings, and then leave it in the fridge, and cool them the next day before you go.
