Pork Recipe?
Does anyone have a pork tenderloin recipe? DH father and wife are coming over friday night and I would like to make a pork tenderloin. Any good recipes? Also please recommend your sides TIA

I found this receipe on here a few months ago and tried it. It was delicious.
Spinach Stuffed Pork Loin
1/2 (10 ounce) package frozen chopped spinach, thawed and drained 3 tablespoons margarine 1/2 cup diced onion 1 clove garlic 1/3 cup dry bread crumbs 3 pounds pork tenderloin 2 tablespoons ketchup 1/4 cup orange juice 2 tablespoons teriyaki sauce 1/2 teaspoon ground cumin
Preheat oven to 350 degrees F (175 degrees C). Saute spinach, butter, onions and garlic over medium heat until soft. Add bread crumbs. Cut tenderloin in half lengthwise. Stuff with spinach mixture and secure with kitchen twine. In a bowl, mix ketchup, orange juice and teriyaki sauce. Baste tenderloin with 1/2 of the mixture. Sprinkle pork with cumin. Place in shallow roaster and bake at 350 degrees uncovered for one hour. Baste with reserved marinade and cook one more hour covered. Use meat thermometer to check for doneness. Thermometer should read 160 to 170 degrees F (71 to 77 degrees C).

Simple and everyone loves it. Take the pork tenderloin and salt cut slits in it-top and bottom. You will insert maybe 3-4 sprigs of rosemary into some of the slits and fresh garlic cloves into the others. Sear it in a hot pan and then bake until done. Remove the rosemary to serve-you can leave the garlic if you prefer or remove that also.

yes!!! i made this one and it was a HIT! (i omitted the rosemary, however)
APPLESAUCE PORK LOIN
Ingredients
* 1 (3 pound) boneless pork loin roast * 1/2 teaspoon salt * 1/4 teaspoon pepper * 2 tablespoons vegetable oil * 1 cup applesauce * 3 tablespoons Dijon mustard * 1 tablespoon honey * 3 sprigs fresh rosemary
Directions
1. Sprinkle roast with salt and pepper. In a large skillet, brown roast on all sides in oil. Place on a rack in a shallow roasting pan. Combine the applesauce, mustard and honey; spread over roast. Top with rosemary. Bake, uncovered, at 350 degrees F for 1-3/4 to 2-1/2 hours or until a meat thermometer reads 160 degrees F. Let stand for 10 minutes before slicing.
Oh and for my side, i made some "risotto"... i put a tablespoon of butter in a skillet and then put in two bags (i buy the boil in a bag rice) of brown rice, and let it sit there until the rice was toasted. then i added a can of low sodium chicken broth and seasoned with salt and pepper and parmesean cheese, i also added some chopped cherry tomatoes in there. I cooked/simmered it until the broth was gone and the rice was completely cooked.
