Plz school me on Ipad, ITouch, etc.

I'm TOTALLY clueless with it all. I am stuck in contract with my Sprint blackberry for at least 1 more year so I don't need the Iphone but I want something where my kids can play with the cool educational apps. (all my friends and ds' teachers keep raving about them).
So what can I get that doesn't have a monthly service but I can buy the apps I want?

editted to add: if i do the ipod touch do i need 8gb, 32 or 64gb?

You can do that with both the I-touch and the ipad. You just need to buy the iPad without the 3G.
