Please give me your best baked ziti recipe... and a question...

My baked ziti seems so boring, can someone give me their recipe that is amazing? Also, do you add an egg in with the ricotta cheese? I am looking for a baked ziti that stays moist, and is delicious! Thanks!

I make the traditional baked ziti with ricotta and ground beef but no egg. I find if you put a lot of sauce on top and cover in foil, it stays very moist!!

I always make mine with ground meat in it. Plus I use a lot of cheese. 2 lbs ricotta, 1 lb mozzarella and 1 lb pasta. Lots of sauce too. I do not use an egg in the ricotta. (I do in lasagna though).

Homemade sauce and use lots of salt in the water when boiling the ziti. Don't buy shredded mozzarella either. Get the block and cube it much creamier.

Here's mine:

1 lb ziti rigate
1 lb ricotta
2 eggs
2 cups + shredded mozz
couple handfuls shredded/grated parm
1-2 jars tomato sauce
10 oz box frozen spinach, defrosted
1 large can mushrooms (or fresh equivalent)
1 small can black olives (optional)
1 onion
2-4 cloves garlic
Italian seasoning

1. Saute 1/2 onion with 1 or 2 cloves garlic. Add tomato sauce and italian seasoning (and any other spices etc you want). Put a layer of sauce on bottom of pan.

2. Boil pasta with plenty of salt in the water. Drain when barely al dente. Mix with some sauce and approx 1/4 c each mozz and parm

3. Meanwhile, saute 1/2 onion, 2 garlic cloves, mushrooms, and spinach (to ensure all water is gone from spinach). Add to ricotta along with 2 eggs, a handful of mozz, a handful of parm, salt, pepper, italian seasoning.

4. Dump pasta into pan. Cover with ricotta mixture. Dump rest of sauce on top. Sprinkle remaining cheeses and olives on top. Bake uncovered at 350 until bubbly, brown, and melted.
