how far in advance do you think I could assemble these? I always do it right before I bake them, but tom is going to be crazy!

I make these every new years eve and ask myself this same question.
One thing I have noticed, is after about an hour, the pastry (I use cresent rolls) starts to rise like crazy. I probably wouldn't do them more than an hour before I pop them in the oven.

I've prepared these the night before (using crescent rolls) and then store them in the frig until I need to bake them and they're totally fine.
