Pignolli cookie recipe?
Does anyone have a good pignolli cookie recipe that they have made in the past? With pine nuts being so expensive, I don't want to go the trial and error route before I find a recipe I really like!

Yes, they are really easy. I've made this a few times:
1 can/tube almond paste (7 or 8 oz) 3/4 cup powder sugar 1 lg egg white 1 tbsp plus 1 tsp honey 1/2 cup pine nuts
Preheat to 350. Line cookies sheets w/ parchment
crumble almond paste in food proc. Add powder sugar until its a fine meal. transfer to lg bowl and add honey and egg white. Mix on low until blended. Increase to med speed and beat for 5 mins until very smooth.
spoon into pastry bag w/ 1/2 round tip and pipe 1 1/4 inch rounds 2 inches apart on prepared sheets. Brush cookies with water and cover w/ pine nuts pressing to lightly stick.
Bake 10-12 mins rotating sheets btwn upper and lower racks half way and bake til light golden brown.. Slide parchment sheets onto cooking racks and cool on parchment.
makes about 2 doz.
The trick is to watch them closely so they dont get too dark.
They freeze really well too.
