Pignoli Cookie Recipe

Can you share yours?

I have seen a few variations (some with flour, some without) - what do you swear by?

Our family recipe is SO simple and easy!!! They are so delicious... everyone raves about them.

I don't have the recipe in front of me right now, but this is basically it. I will update this later if I am wrong on the measurements.

1 lb almond paste
1 lb sugar *We use 12oz bc we don't like them super sweet*
4 egg whites
Pignoli nuts

The first thing I do is take a fork to the almond paste and break it up until it's smooth. Then I add the sugar and eggs and mix them well. I mold the cookies with a spoon, roll them in the pignoli nuts and bake at 350. You have to watch them closely bc they burn very easily.

Nope!! I thought it was weird, too. Chat Icon
The 'dough' isn't firm at all... I think this is what makes them so light and chewy.

Pignoli cookies are an awesome cookie to make for someone one on a gluten free/wheat restricted diet! :)
