Is there a way to set a default for my font and color when I compose an email?

Go to Tools
Select Options
Under Options, select 3rd Tab - Mail Format
Under Mail Format - in the middle is "Stationary and Fonts"
Select Fonts - then you can choose when composing a message, when replying, etc.
