Onions
What are your go to onions?
White ?
Yellow?
Sweet (Vidalia) ?
Red?
Other?
And what is the difference between white and yellow?
Is there one you are 'supposed' to use?
I usually use the red for raw preparations and the yellow for cooked. I use the sweet when I am carmelizing.

If I'm making up my own recipes, I use vidalia or red.
If I'm following a recipe, I use what they say to use.

I love vidalia (sweet) onions. I use it raw on bagels and lox and I also cook with it. I use yellow onions to cook with as well, smaller ones, if they are on sale but I still prefer vidalia.
I use red onions, raw and cooked. Raw in guacamole and salads or salsas but cooked in meat I am making mexican or spanish style.

I use a lot of different types. For general cooking I'm usually using Vidalia. I like Red onions for salads - I also like spring onions for salads when they are available.

I like Spanish/White or Sweet onions for cooking. I almost never use yellow onions.
Red for guac and salads and burgers.
Shallots for risotto.
