Ok, so let's say you make a reservation at a restaurant...

for 20 people. You made the reservation about 2 weeks ago. How many waiters/waitresses would you expect for your party?

IA, but typically one b/c it seems as though a lot of restaurants these days have 1 person for everything.
1 waiter/waitress, 1 server, 1 busser, etc.

1, 2 at the very most but not likely. With expensive restaurants, they tend to have food runners, busers and hosts that help to take care of things. Plus, the waiter/waitress may have only your table in their station because of the size.

Ok, I guess I will just say why I'm asking. We were at a restaurant to celebrate my aunt's 50th bday last night and the place was very nice, but they only had one waitress for the entire table, no runners, no bussers, nothing. Just one waitress, and I felt so bad for her because she was obviously overwhelmed, and my family is thankfully very forgiving because she left the table a mess with dirty dishes everywhere and what not while we were trying to have cake, she gave my BIL food that someon already took a bite out of, etc. And while we were upset about the used food, we really couldn't blame the poor girl because she was doing EVERYTHING for 20 people by herself. Chat Icon How is that condusive to good service, plus, she had another table of at least 10 people. We were so upset because on the one hand, we felt so bad for this girl, but on the otherhand, it was a pricey meal and we shouldn't have had to clear our own plates and walk behind the bar to get our own napkins.

A table of 20 by itself is very managable and wouldn't need a second server. However, if she had a 10 top being served at the same time as your table, it could become difficult. They may have been short staffed because someone didn't show or was sick. But having been there and done it, 2 tables of that size isn't that hard to manage and it sounds like she just wasn't very good at waiting tables.

Because essentially in this type of expensive place the waiter only takes your order.

You have food runners. Bus boys. Another guy bringing over the pepper, cheese, etc.

Someone to "front" the table and someone to "back" the table. The fronter takes the order and makes sure everything is OK, while the backer does drinks, bread and coffees. Both of them help clear. At the restaurant where I worked this is what we do. Technically in a nice restaurant there should be one server per 10-12 people. If it were that busy a manager should be helping out.
