Need some preggo baking ideas...

I'm in the mood to bake something this weekend...

Right now I'm thinking oreo cheesecake, but I'm waiting to find a good recipe!

Any other ideas? I want something with chocolate... but not TOO chocolatey... and nothing with fruit or pumpkin Chat Icon

A recipe I read somewhere requires reese's peanut butter cups and boxed brownie mix.

Basically layer the bottom of the pan with the reese's peanut butter cups, prepare the brownie mix per the instructions and pour over the peanut butter cups.....delish.

I think i might try that this weekend.

I am so weird.

my mom makes mini cheesecakes with oreos and also nilla vafers (my personal fav)

she gets those mini muffin tins and puts either one side of an oreo (sans filling) or a nilla wafer on the bottom.

for the filling, I am pretty sure she uses the recipe on the Philly cream cheese box (though I have her recipe written down at home)

she fills the little cups I guess about 3/4 of the way up and bakes them off..I am pretty sure in a water bath. when they are cooked, she turns off the heat and opens the oven slightly, leaving them in (it's supposed to help diminish cracking) to cool down slowly.

once cooled, you can top them with stuff or leave them plain.

If I am not in labor, I may actually try LB's posting for the quick apple coffee cake....

other than that, I could go for a nice marble pound cake or coffee cake. what about something like that?

Hmm....

now DH is saying I should test out a recipe for Thanksgiving dessert.

My mom, brother, and brother's GF are coming for what we call "fakesgiving" - aka the weekend before thanksgiving Chat Icon and we're going to be cooking for them.

We're planning on doing one chocolate dessert and one fruity dessert ...

Any ideas for the chocolate dessert??

what about a mousse or a pudding? something light. something served in wine glasses and begging for fresh whipped cream.

Try making these: martha stewart cherry chocolate chunk cookies
they're soo yumm. and i've made thema few times.

Sometimes i just make it with the oats and chocoalte chips and toffee bits bc my father, brother and DH would die if there were fruit in their cookies..

and ive substituted dry cherries for dried cranberries..just as yummy.

I'm in the mood to bake this weekend too. So, I picked up two boxes of hershey's brownie mix! HAHAHA

I have no motivation to cook or bake anything that requires thought or more than one bowl/pan.

I am making pumpkin bars tonight. (but without the frosting, cause I am not a frosting fan)

Here is the recipe:
INGREDIENTS
3 eggs
1 2/3 cups white sugar
1 cup vegetable oil
1 (30 ounce) can Libby's Pumpkin Pie Mix
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 teaspoon pumpkin pie spice
1 teaspoon salt

1 (8 ounce) package cream cheese, softened
3/4 cup butter, softened
1 teaspoon vanilla extract
3 cups sifted confectioners' sugar

DIRECTIONS
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix the eggs, sugar, oil, and pumpkin with an electric mixer until light and fluffy (it will actually be a bit runny).
- Sift together the flour, baking powder, baking soda, cinnamon, pumpkin pie spice and salt. Stir into the pumpkin mixture until thoroughly combined.
- Spread the batter evenly into an ungreased 10x15 inch jellyroll pan.
Bake for 25 to 30 minutes in preheated oven. I start checking them at 24 minutes (for my oven) and take them out the very first time the toothpick comes out clean. Baking longer will just make them more "cakey". Cool before frosting.

To make the frosting, cream together the cream cheese and butter with electric mixer. Beat in vanilla. Add confectioners' sugar a little at
a time, beating until mixture is smooth. Spread evenly on top of the cooled bars. Cut into squares.
