Need more dinner ideas

I know we chat about this often on this board, but I'm just running out of ideas for fast dinners for my girls the 4 nights I work. I cannot get it together enough to cook on the weekend for the whole week. I'm tired of the pasta, chili, grilled cheese, breakfast for dinner, meatballs, chicken cutlets, spinach pancakes, mac & cheese, quiches...

I need dinners I can make quickly when I get home. Raw chicken is making me kind of ill lately so anyhing meatless (of chicken-less) would be great too. What are your quick, healthy go-to dinner for kids?

Check out the Weelicious cookbooks and website. Lots of good ideas there.

Are these meals just for the kids or have to feed the whole family?

How old are they?

I've been looking at cookbooks and websites trying to get more ideas for my DD- almost 16 months- because she refuses to be spoonfed or feed herself.

I do pasta, vegetable, chicken soup. She hates chicken. I probably won't add it anymore. Also, most of the broth gets wasted but she eats the pasta and vegetables.

Mini-quiches, made in the mini-muffin tins. Eggs with any vegetable you want mixed in.

Grilled Cheese sandwiches.

Mac and Cheese.

Pasta like ravioli in a sauce.

Sometimes I just give her a variety plate. Cut up pieces of cheese, avocado, fruits, veggies, whole grain bread. Then she picks at that. Usually eats most of it better than the other meals.

Egg Salad with crackers.

I found a recipe for spinach ricotta bites I want to try and make on weelicious.

Pizza.

Hummus sandwiches, on whole wheat pita.

Roasted vegetables like eggplant and zucchini with meatballs or chicken. If you want to go meatless, just do with a bowl of yogurt or oatmeal.

I love food and love variety but when time is tough, I really think it is just about finding the 14 meals that work best for your family and then repeating those.

wanted to add: what about fish?!? my daughter loves white fish and also eats salmon. I do that with a veggie and quinoa or millet.

I've been making a lot of stews or thick soups on Sundays and then heating them during the week.

Beef stew
White chicken chili
Lentil soup with or without sausage
Chicken soup
Pasta fagiole
Split pea

Spinach ravioli (Costco), mushroom ravioli
Other cutlets: pork, veal
Tilapia
Bison meatballs (delicious!)
Asparagus
Brussels sprouts (yep: kids eat them)
Rice

We cheat by getting a rotisserie chicken every so often
