Need major tomato help!!!

So we are growing tomatoes this year and OMG we have SO many! I am getting tired of tomato salad Chat Icon but I honestly can't think of what to do with them!

Help! How can I cook them so that we can preserve them or store them? Or even put them in new recipes now?

Sauce + freeze.

Tacos/burritos.

Tomato and zucchini.

Chicken parm with fresh tomato.

Grill 'em

If you have cherry or grape tomatoes - burst them over seared fish

Pico de gallo is great with chips or over marinated steak or chicken - or on tacos/burritos

BLT's are a late summer fave in our house

Italian Sauce

American Sauce or Ghoulash

Tomato Mint Salad

And of course.. just cut and salted.. my kids favorite.

SAUCE! Did you see the fresh tomato sauce recipe that I posted recently? You should definitely try that. The tomatoes cook down A LOT so you can use a bunch and not be left with a ridiculous amount of sauce.

ITA with rojerono on the pico de gallo. I made some Monday night with fresh tomatoes from my MIL's garden and it was SO good! I made it with tequila-lime grilled chicken, yellow rice, & sliced avocado for a nice healthy dinner!

tomato, mozzarella & basil salad... or you can marinate it and throw that together with pasta (or use a pesto sauce instead of basil).

you can slow-roast them too which is really tasty!

Make sauce and vacuum seal those bad boys so you can have sauce for months!!! DH & I make and jar sauce every year around this time!!

I am so bad at making sauce so I tried a tomato soup recipe I found it Women's Day and tweaked it. Basically it came out as a crem of tomato soup and it was really good with some crusty Italian bread.
3 lbs tomatoes coarsely chopped
1/2 onion chopped
olive oil and balsamic vinegar about 1/4 cup each
1/3 tsp of sugar
about a cup of half and half (I used fat free)
some pasta, I used ditalini but I am sure elbows, orzo or whatever would be good
salt and pepper to taste

stir the chopped up tomatoes with the onion, oil and vinegar and some salt and pepper in a large bowl and leave it for 20 min so the tomatoes release their juices. mix occasionally.

puree (I used an immersion blender) and add the half and half and sugar.
Make the pasta separately and combine when cooked.
Heat soup and add salt and pepper to taste.

It came out really nice and I am going to freeze some too!

We always end up jarring tons of sauce and tomatoes thit time of year too. We've been eating so many tomatoes I feel like I'm going to turn into one! But boy do we LOVE them!

I'm in the same boat! here are some things that I have been making!

Tomato pie
crust - 1 C Bisquick (I use the heart healthy) 1/4 C water 1 Tbs soft butter. Mix with fork and press into 9 inch pie pan that has been sprayed with Pam.

mix 1/2 cup mayo with 2 chopped scallions with whites some chopped parsley and shredded cheddar cheese blend

slice 6-8 tomato's layer the tomatos slices and some of the mayo mixture until the crust is full. bake at 350 for 30-35 minutes.

Balsamic Tomato-Basil Pasta (my DH LOVES this)

1 lb any type pasta, I use whole wheat thin spaghetti
1 bunch fresh basil
6 -8 garden fresh tomatoes, diced
extra virgin olive oil
4 cloves garlic, chopped
1/4 cup good balsamic vinegar
1/4 cup grated parmesan cheese
and pepper to taste

chop the the tomatoes
Saute garlic in olive oil (I add a tbs of butter)
Add tomatoes cook for 7 minutes or so
add Parmesan cheese
then balsamic vinegar
I add some black pepper here
When the pasta is done I add it to the tomato pot
Cut basil leaves and toss with pasta and tomatos
serve with additional Parmesan on the side

YUMM!!!

oh this is from the foodnetwork -
I have made it a bunch of times for BBQs.

Orzo Salad with Feta, Green Beans, & Tomatoes

Ingredients
2 cans of (thin French green beans) green beans
2 cups orzo
1 large onion
2 garlic cloves
6 medium vine-ripened tomatoes
2 tablespoons white-wine vinegar
2 tablespoons chopped fresh flat-leafed parsley leaves
2 cups crumbled feta (about 12 ounces)
2 tablespoons EVOO

Directions
Fill a 4-quart kettle three fourths full of salted water and bring to a boil for orzo (cook as directed).

Chop onion and mince garlic. Chop tomatoes. Cook onion and garlic in oil over moderated heat until onion is softened. Add tomatoes and cook, stirring, until tomatoes are softened, about 2 minutes. Remove skillet from heat.

Drain beans and add to tomato mixture.
Add bean mixture to orzo with vinegar. parsley, feta, and salt and pepper to taste, tossing to combine well.

Refrigerate and serve.
