NEED HELP QUICK...CHEESECAKE...

I am in the preocess of making mini cheesecakes. I followed the directions exactly. While mixing the ingredients together the creamcheese is lumpy..how can I get the chunks out? Will it bake ok with the chunks? I let the creamcheese get to room temp like it said..ahhh I am so lost..I have the oven on ready to go..

Do you have an immersion blender or a large mixer? Put the mix into that. I find that the better mixed the batter the better cheesecake tastes. If necessary, take a strainer, strain out the large pieces and then mash those by hand.

I'm not sure what you can do about it now, but when I make cheesecake I let the eggs and sour cream come to room temperature too. I haven't had a problem since I started doing that.

ok so i stuck it in the blender and it got the chunks out..little bit of bubbles but ill take that over the chunks..lol..Thank you..As you can see this is my 1st time ever making cheesecake..lol..Next time I will make sure the eggs are room temp as well..I will let you know how this 1st batch comes out..I pray they are ok for my godsons christening tomorrow!Chat Icon Chat Icon Chat Icon Chat Icon

I always use a hand mixer or stand mixer to get all the lumps out.
