NEED HELP FOR XMAS EVE DINNER!!

we are having vegetarians over for dinner. one of them who is my sis doesnt eat seafood.

what the heck should we make?

we wanted to do a few courses but its becoming a challenge. drawing a blank for sides

all we've come up with is

tomato with mozzarella
bruschetta

maybe ravioli

Eggplant rollatini
Eggplant parmigiana
Manicotti
Vegetable Lasagna
Cheese ravioli
Stuffed shells
Penne ala vodka (minus the prosciutto)


ETA: I just noticed you want a few courses. Here are some ideas - mind you it's mostly Italian, lol

Apps:
Cheese and crackers
Baked brie
Shrimp cocktail (even though your sis doesn't eat fish, other people could pick on this)
Cold antipasto with meats, cheeses, olives, mushrooms, artichokes (again, sis can eat around the meat)

Main meal:
Some sort of pasta with maybe eggplant parm and chicken parm (if you're up to making both)
Stuffed artichokes
Salad
Sauteed mushrooms
Roasted veggies

Definitley a pasta dish, I think ravioli is perfect and you can get spinach ravioli too if you want. And mozz and bruschetta are perfect too! You can still make a fish or meat if everyone else will eat it... we have this issue on xmas eve. We do all fish, but there is always a pasta dish that is no fish/meat for that person and that is always enough for them. The rest of us are just pigs or eat more seafood than necessary!

veg friend apps:
spinach balls (so easy and yummy!)
stuffed mushrooms
cheese platter

some apps for the seafood lovers (if you want to):
baked clams
mini crab cakes
shrimp cocktail

Will they eat sauce that was cooked with meat in it? Cause meatballs and sausage would complete the ravioli. And a nice salad!

I make artichoke bruschetta and its DELICIOUS!

its a great app. if you're interested, FM me.

You could also make fetuccini or tortollini alfredo.

baked ziti is super easy and you can prepare it the day before and then just pop it into the oven the day of!

I would make risotto with either wild mushrooms or asparagus for a vegetarian meal. It works as a side for the meat/seafood eaters and it works as a main course with a salad.

You could also do a some sort of cream based soup.

SURE-

It can be made either on garlic bread or lately I've been putting them on garlic toast pieces and its even better, easier and there's less mess.


1 can artichoke hearts (drained and quartered)
1 cup of mayo
1 cup of parmesan cheese (sometimes I use Sorrento Italian Cheese Blend)
Garlic Powder (optional)

Mix all the ingredients together- add garlic powder if you want EXTRA garlic, spread on garlic bread or toast- bake in the oven at 375F for about 10-15 mins or until warm. Serve immediately and enjoy.

If making on garlic bread- cut into little 1" squares before serving.

I'm making a roasted bruschetta this year
My ILs don't eat meat so I'm making a (proscutto-less) ala vodka sauce (so I guess it's a pink cream sauce?) over (lobster) raviolis, but you could do penne.

Deviled eggs
Cheese & veggie Stromboli
Stuffed mushrooms
Eggplant parm/rolentini
Stuffed peppers
butternut squash soup

I'm also starting the meal with pasta figioli & then a winter salad (maple dijon vinegrette dressing, homemade spiced pecans, gorgonzola cheese, sliced apples, mixed greens)
