Need cold app ideas!
For a party I'm throwing in my apartment friday- no oven because its going to make the apartment too hot! Im just going to serve a bunch of appetizers.
So far I have bruschetta and cesar salad. I was thinking of doing pulled pork in the crock pot but it makes the house smell like vinegar... TIA

Deviled eggs Cold spinach dip Cheese and crackers Veggie platter Caprese salad Pasta salad Hummus Bite sized sandwiches (buy cold cuts, cheese and bread, make sandwiches and cut them not quarters)

My friend makes this cold dip and I looove it. So easy, refreshing & yummy!
Combine the following: 1 can corn, rinsed and drained 1 can black beans rinsed and drained 1 jar salsa (I prefer Tostito medium) Chopped cilantro 2 avocados, chopped (recipe calls for 1, but I always add 2) the juice of half a lime optional: finely chopped red onion, to taste
Serve with Tostitos (the Scoops are handy since it's a chunky dip)

Bruschetta is good.
You can do: -guacamole -meatless nachos (you can layer chips with lettuce, tomatoes, olives, beans, and you can do either shredded fresh cheese or use the microwaveable melted kind) -chips and cold dip (maybe sour cream based) -salsa -trail mix -mozz,tomato,basil and balsamic vinegar salad or you can do it on skewers -mixed olive and cheese platter with bread and crackers -flavored olive oil with a dipping bread -vegetable platter -crackers or bread with jams or peanut butter

Five Layer Mexican Dip
Ingredients 2 teaspoons olive oil 1 medium onion, diced 2 cloves garlic, minced 1 (15.5-ounce) can black beans, preferably low-sodium, drained and rinsed 1 tablespoon minced chipotle pepper in adobo 4 tablespoons lime juice 1/4 teaspoon ground cumin 1 tablespoon water 1/2 teaspoon salt 2 cups corn kernels (10-ounce box frozen corn) 1/4 cup chopped cilantro leaves 2 ripe avocados 4 medium tomatoes, seeded and diced (about 2 cups) 1/4 cup thinly sliced scallion 1 tablespoon finely diced jalapeno pepper, optional 3/4 cup shredded extra-sharp Cheddar
Directions Heat the oil in a skillet over medium-high heat. Add onions and cook until they soften, about 3 minutes. Stir in the garlic and cook for 2 minutes more.
Put half of the onion mixture into a food processor with the black beans, chipotle pepper, 2 tablespoons of the lime juice, cumin, water and salt. Puree until smooth. Set aside.
Add the corn to the skillet with the remaining onion mixture and cook for about 3 minutes. Remove from the heat and stir in the cilantro leaves.
In a small bowl mash the avocado with the remaining lime juice. In a medium bowl toss together the tomatoes, scallion and jalapeno, if using. Season tomato mixture with salt and pepper, to taste.
Spread the black bean dip into the bottom of an 8 by 8 glass baking or serving dish. Top with the corn mixture, spreading it out to form a single layer over the beans, repeat with the avocado, then the tomatoes. Top with cheese. Serve with baked chips.

We always do fresh mozzarella, italian sausages sliced up, roasted red peppers, marinated mushrooms, olives, and italian bread.
We also do a bean salsa similar to the one above...corn, garbanzo beans, kidney beans, pink beans, yellow/orange pepper, red onion, cilantro, white balsamic and olive oil...
Buffalo chicken dip...I totally make this in the microwave so its super easy and serve with crackers and celery
Mini chicken salad sandwiches...chicken, celery, craisins, walnuts, mayo, celery salt
