Moms who cook big meals every night....
where do you find the time?????!!! I read some of those weekly menus on the food board and am impressed!!!!

I work F/T, but I wake up early (5:45AM) and prep whatever I am making for dinner (tonight is pork loin, so I took it out, marinated it, and have it ready in the fridge). Then it only takes 1.5 hours to cook, so I pop it in when I get home, then it's ready 1.5 hr. later. I cut up potatoes and veggies and have it cooking in the same pan.
ETA: it came down to saving $$ with us. First we did more takeout, but that got pricey--the entire meal tonight was under $10 for everything, and we'll have leftovers for lunch.
