Menu thread 9-30
I realize it's super early but doing my shopping list now so I figured I'd type it out. ETA: Totally redoing this lol.
Sat.- We had take out from Mercato in Massapequa. Delicious flatbread with goat cheese, red and yellow roasted peppers , grilled chicken and balsamic reduction.
Sun.- Had cream of turkey soup and a toasted bagel
Mon.- Pulled pork, beans, corn on the cob and creamed spinach
Tues.- Baked stuffed shells with meat sauce and mozzarella cheese
Wed.- Pork souvlaki (greek style marinated pork tenderloin), toasted pita bread, tzatziki sauce, greek salad
Thurs.- Lemon chicken, baked rice and peas
Fri.- Pizza night

I have the next 8 days planned out but not tonight! No clue what I will make tonight...
Sat: buffalo chicken chili mac
Sun: pasta with meatsauce and sundried tomatoes
Mon: squash and chicken with an olive-tomato relish
Tues: chicken and pepper fajitas with all the toppings
Wed: vegetable noodle soup (any good recipes out there?)
Thur: cheese and potato blintzes with breakfast sausage
Fri: eggplant parm
Sat: at my parents house

Monday- Skinny Taste Taco chicken chili
Tuesday- Skinny Taste Greek meatballs with Broccoli
Wednesday- Greek Style Shrimp with Couscous

Friday- Steak? I have no idea! Maybe Dijon Chicken.

Friday: Grilled Skirt Steak with Chimichurri Sauce, Black Beans, and Yellow Rice
Saturday:Ramen Noodles with Beef, Shiitake Mushrooms and Spinach
Sunday: ST Asian Meatballs (used ground chicken), Jasmine Rice, and Broccoli
Monday: Skirt Steak Leftovers
Tuesday: Ramen Leftovers
Wednesday: Tandoori Chicken, Mixed Vegetables, Basmati Rice, and Yogurt Chutney

I use this recipe, that I linked above. I make it a little different. I use regular (not whole wheat) elbow pasta. I also don't put it in a casserole dish at the end and bake the cheese on, I serve it like a regular more liquid-y chili and just put shredded cheese on the top of each bowl I dish out. I also add a few fresh chopped chili's to make it spicier because DH likes it that way. Otherwise, I think that is just about the same recipe!

Mon: salmon with baby bok choi spinach water chestnuts, bamboo shoots, over rice noodles
Tues: chilli con carne rice, avocado salad
Wed: chicken tacos black beans, salad
Thurs: pot roast, carrots, zucchini over egg noodles.

I first saw it on pinterest, there are a lot of different variations. Here's one version
It's basically refrigerated biscuit dough cut up, mixed with sauce, then topped with cheese and whatever toppings you want, bake it in a casserole.
