Menu Thread- 8-22

Sun.- Chinese

Mon.- Spaghetti and meatballs, garden salad with creamy balsamic dressing

Tues.- Turkey breast, stuffing, sweet potato casserole, cranberry sauce, gravy

Wed.- Pulled pork sliders, semi- homemade baked beans, coleslaw

Thurs.- Buffalo chicken pizza, salad

Fri.- Take out (probably Mexican)or left overs

Sunday - MIL's house

Monday - Chicken and Olives (Pioneer Woman) with egg noodles, House Salad, Onion Focaccia

Tuesday: Grilled Porterhouse, Roasted Salt Fingerlings, Kale Chips, Sliced Tomato

Wednesday: Panko crusted pork chops, potato pancakes, grilled zucchini & yellow squash.

Thursday: Chicken Tikki Masala, Coconut Basmati rice with tumeric and peas,

Friday: Breakfast for dinner! Breakfast pizza, citrus salad, orange julius slushies.

Saturday: Effed if I know..

Sun: Homemade tomato bisque w/provolone, pepperoni asnd pesto paninis

Mon: Grilled lamb chops, lemon garlic couscous, pea salad

Tues: Out

Weds: Turkey sliders, cottage fries, corn on the cob

Thurs: Spinach alfredo linguine w/blackened chicken and broccoli, garlic bread and salad.

Fri: Greek chicken pita sandwiches, orzo and feta salad

Sat: Out

The kids love them too!

Grate 4-5 potatoes and 1 onion and then squeeze until the water is out as best you can. Drop the dried potato mix into a bowl and add an egg, a couple of tablespoons of flour, a little bit of minced parsley, a tiny pit of minced scallion, a little lemon juice (maybe a tablespoon.. about half a lemon) - a pinch of baking powder and a little salt and pepper. Sometimes I toss in just a little bit of cheese. Swiss goes nice. Mix it together. It will look like.. I don't know it doesn't look like pancake batter. It's like grated potato with mushChat Icon

Heat a pan with oil (light oil like canola) and add a pile of the potato mix. flatten it just a little and then cook until golden. flip and let the other side get golden. I top with a little bit of chopped scallion and serve with sides of sour cream and apple sauce.

okay I have been terrible with these threads lately, but I'm trying to get back in the swing of things. I haven't been cooking on the weekends because my parents order in or go out to eat or BBQ.

Mon - whole herb-roasted chickens, mixed greens salad with feta, dried cranberries, & candied walnuts, rice

Tues - spicy sausage & broccoli pasta

Wed - turkey tacos with all the fixins, yellow rice, black beans

Thurs - homemade pizza, caesar salad

Sun - Pork tenderloin with carmelized onions, mashed potatoes and broccoli

Mon - pulled chicken burritos with salad

Tues - Pork with a different spice, not yet determined...corn on the cob and salad

Wed - turkey burgers, baked beans, salad

Thurs - Mahi Mahi fish with veggies

Fri - ?

Sat - probably go out

MON - Chicken Pomodoro, Egg Noodles w/Spinach

TUES - Chicken Souvlaki, Homemade Tzatziki sauce, warm pitas, Rice Pilaf, Greek Salad

WED - Turkey Stuffed Peppers, Salad

THUR - Pork Chops w/ Beer & Bacon Gravy, Spaetzel w/ sting beans

FRI - Not sure yet, possibly chinese

Sun: chinese!

Mon: grilled sausages with sauteed peppers, onions, and zucchini, warmed baguette

tues: crab and corn chower with multigrain boule

wed & thurs: roasting chicken parts for 2 meals

legs and thighs with rice, beans, avocado salad

roasted chicken breast with tortellini spinach salad

Fri: OUT

Chat Icon I mean I just feel.. 'eh' when menu planning lately. There's nothing that I'm excited to make or eat. Ya know? If I didn't have a family I'd be existing on Cheerios and scrambled eggs this week!!

We've been trying the low carb / low glycemic diet route lately so my menu's have been Chat Icon Chat Icon Chat Icon but I am making an effort this week to be more creative

Sunday: Rib Eye w/ mushrooms & red wine reduction sauce, greenbeans w/ garlic & oil, green salad

Monday: Grilled Chicken Breasts with Balsamic BBQ Sauce, Canellini Beans sauteed w/ fresh cherry tomatoes & garlic, Broccoli w/ garlic & oil

Tuesday: Butterflied Cuban Pork Chops (substituting virgina ham and leaving out the pickles), arugala salad w/ goat cheese

Wednesday: Lemon Garlic Chicken on the Bone, Ratatouille, baked potatoes, green salad

Thursday: Turkey London Broil, Asparagus, Black Beans over Brown Rice, arugala sald with strawberries

Friday: don't know ..

Monday: chicken soup with orzo, carrots and spinach

Tuesday: Baked wild snapper, sauteed zucchini, brown rice pilaf

Wednesday: country style ribs in the slow cooker, roasted sweet potatoes and broccoli

Thursday: Chicken sausage with peppers and potatoes

Friday: Spicy turkey stir fry with red peppers and snow peas over glass noodles

Sat: Chicken Cacciatore over WW Angelhair Pasta

Sun: Pot Roast with baby carrots, potatoes and onions with a crusty semolina bread and butter

Mon: "Fake Monte" it's a spin on a time consuming Armenian meal. A "soup" with shells, ground beef, and mint topped with plain yogurt

Tues: Skirt Steak, baked corn fritters, sauteed broccoli florets in evoo, garlic and bread crumbs

Wed: Polish Sausage and Pierogies

Thurs: Pasta Primavera with chicken

Fri: Chef's night off
