Mon.- Leftovers! Ziti, ham, candied sweet potatoes, spanokopita
Tues.- Dolmades (stuffed grape leaves with meat and rice) with avgolemono (lemon) sauce
Wed.- Chicken and black bean burritos, rice
Thurs. Fettuccini and vodka cream sauce with peas, stuffed artichokes

Sat: debbie's armenian lamb kebabs, beef and chicken kebabs, debbie's rice pilaf, pear and blue cheese salad, debbie's dirty bread, garlicky and spicy brussel sprounts
Sun: perfect spiral ham (courtesy of Carolyn) baked zitis with meat sauce, roasted asparagus, apple and blue cheese salad  , warmed baguette
Mon: we didn't eat dinner. we were too tired from the weekend 
Tues: left over baked ziti with meat sauce, sauteed asparagus
Wed: shrimp scampi (oil, wine, garlic, parsely. I hate it with butter) over fettucine, salad
Thurs: chicken cutlets, black beans, rice, avocado salad
Fri: hoping to finally get out for our anniversary
ETA: I have to give serious props to Debbie for her awesome recipes (and also to her mother for allowing me to have it   ). the lamb was awesome, everyone dogged it...and the rice pilaf was so delicious. everyone was talking about it. I had a very very happy and full house on Saturday. thank you so much!!!
and thanks again to Carolyn for bringing the ham. my mom almost fainted from sticker shock but everyone agreed the ham was so delicious it was worth the price, and the suspect swap in the parking lot of a soccer field. 
you guys truly made my family's Easter and I thank you so much.

My DH's favorite meal!
It's soooo easy, it's not even really a recipe. I cut baby new potatoes into 1-inch pieces, season with salt, pepper and garlic powder, and roast them (I prefer 450 for 30 minutes but you do it how you like).
I cut chicken breasts or tenders into one-inch pieces, season with S&P & garlic powder, or sometimes grill seasoning, and saute until cooked through.
I chop up 4 scallions (white and green parts) and I cook 4-5 slices of bacon, then crumble.
In a BIG bowl, mix potatoes, chicken, scallions, bacon, 1 cup shredded jack or cheddar cheese, and 1/2 to 1 cup light ranch dressing. The cheese melts, the ranch dressing gets warm, and it tastes exactly like cheese fries you get out at a restaurant! It's super easy and to die for
