Re: meatloaf
This is my husband's family meatloaf recipe. Passed down through the generations, apparently It's delicious, but probably terrible for you.
1 1/2 pounds meatloaf mix meat 1 egg 1/2 cup milk 3 pieces of toasted bread 1/2 cup seasoned breadcrumbs (I eyeball it, depending on the consistency) 2 stalks of celery 1/2 onion 1/4 cup quick oats 8 slices of bacon
Chop celery and onion and saute in a little olive oil. Set aside.
Put the meat in a big bowl. Beat egg and milk together and pour over the meat, mix it together (using your hands is best, but gross). Rip up the toasted bread into tiny little pieces and add to the mixture. Add seasoned breadcrumbs. Add sauteed celery and onions. Add quick oats. Combine well.
Form into a loaf and put in and 8x8 pan. Drape the uncooked bacon across the top of the loaf.
Bake at 350 for 90 minutes.
It's time consuming and it will probably kill you, but it is mighty delicious.

Re: meatloaf
Italian Meatloaf
1 1/2 lbs. chop meat handful of breadcrumbs handful of grated cheese sprinkle of parsley flakes tablespoon of milk pepper to taste 1 egg 1/3 cup of delmonte tomato sauce 5 slices of bacon (uncooked) mozzerella cheese
Preheat oven to 375. In a bowl combine chop meat, breadcrumbs, grated cheese, parsley, milk, egg, and pepper. Mix with you hands well. Spray a baking dish with cooking spray and lay meat flat down the center of the dish (I use a glass pyrex 9x11). Slice 4 pieces of mozzerella and lay them down the center of the meat. Then layer 3 peices of bacon over top of the cheese. Fold the sides of the meat up to completely cover the cheese and bacon. Bake at 375 for 40 to 45 minutes.
About 15 minutes before the meatloaf is finishes, lay the extra 2 slices of bacon on the top of the meatloaf to cook. When there is 5 minutes cook time remaining, pour the 1/3 cup of sauce over top to cook.
This is DELISH. I hate meatloaf but this doesnt even taste like meatloaf. The cheese in the center melts perfectly when cooked and it's like a stromboli but with meat on the outside and cheese and bacon inside. It's sooo good.
