Mashed Potatoes Q
If I recall, you start them in the pot WITH cold water, right?
Secondly, can I peel and quarter them on Wednesday and then cook and make them on Thursday?

I would not, because I wouldn't let them sit in water that long, if u cut them that far ahead they will discolor. If u do not care about skin use red baby potatoes then u do not have to peel. They make great mashed potatoes

I always cut them the day before. Just throw right in the pot of water and put the whole thing in the fridge. Then I throw it right on the stove the next day.

wow really? I didn't know that. I tried it 1x and it changed the entire texture. maybe it had something to do with the type ? cool to know!
