Mashed or Jacket Taters?

I was planning on doing mashed potatoes with a variety of toppings for our Christmas Eve party.. but the more I think about it the more my arms hurt thinking about peeling and cutting and mashing enough potatoes for all those people. And with everything else I will have to do.. it just seems SO much.

My girlfriend suggested just doing Jacket potatoes with choice of topping. It would be WAY easier... I can just wrap the potatoes in foil and toss them in the oven - and then let people top the hot baked potato!

Do you think this would fly? It would be way easier on me.. but would it be too much trouble in a buffet type setting? Also.. if I DID do it.. how many potatoes should I get. I do 1.5 potatoes per person for mashed.. should I do the same for jacket?

I'd just do that because its way easier. Jacket potatos are fine, but I think 1 pp is adequate, because you have a lot of food going on and they can put a lot of toppings on.

I think Ore Ida has the steam potatoes - just steam the already peeled/cut potatoes and make them your own by adding milk/butter/whatever....it will save you the time of peeling potatoes and you get to make what you want.

Or delegate to your kids if they are old enough.

BRAINSTORM

Make mashed potatoes, put into little mini muffin pans to shape - then push in the middle. bake them off a little to set. Then you can "fill" the mashed potatoes with the toppings and they almost become finger food!.Chat Icon Chat Icon

the baby reds are good and you can make dirty mashed with garlic and sour cream..yummo.

I would not peel pounds of potatoes. Jacket potatoes are a good idea however they can get heavy on a plate and are very filling. People may take a spoonful of mashed but they will take a few skins and fill up.

I would do roasted red potatoes. Cut them in half or in quarters and roast them, skins and all.
