We've been eating a lot of tilapia lately!
Last night I did a panko-crusted tilapia... just sprayed the tilapia with cooking spray (very lightly), sprinkled with salt and pepper, and then sprinkled on italian-style panko... Bake at 450 for 10 minutes, then broil for 1-2 minutes until lightly golden and crispy.
I served it with white rice and steamed broccoli.
Also, DH is a HUGE fan of fish tacos (really common in CA):

Or Tilapia with tomatoes and arugula
Bring 1/4 cup water to a boil in a nostick skillet. Add 1/2 cup cherry tomatoes (halved) and a pinch of red pepper flakes. Put 2 tilapia filets on top of the tomatoes and cover - cook for about 3 minutes. Add a few cups of arugula, cover and continue to cook until the tilapia is nice and flakey... Then transfer to plates. Off the heat, add a little butter and lemon juice (and capers if you want)... and season with salt and pepper. When the butter has melted, drizzle the sauce over the fish.

tilapia is such a versitile fish, you can make it so many ways
One of my favorites: In a roasting pan, pour 2 tbs olive oil 1/4 cup white wine 1/4 cup chicken broth (or water) diced tomato (I usually put in halved cherry tomatoes) fresh or frozen zuchinni slices 2 cloves crush garlic
mix that around
lay tilapia over mixture and season with salt, pepper, garlic powder and dried parsley.
Broil or bake
another way lay sliced red onion, orange slices, and fresh basil on bottom of pan w/ some orange juice. Lay tilapia on top and season with salt, pepper. Bake. (can substitute lemon) This would be good with a pineaple/mango salsa (diced pineapple, diced mango, cilantro, crushed garlic, olive oil and a splash of rice wine vinegar)

I like this recipe, and it's so easy.
INGREDIENTS 3 tablespoons sun-dried tomatoes packed in oil, drained and chopped 1 tablespoon capers, drained 2 tilapia fillets 1 tablespoon oil from the jar of sun-dried tomatoes 1 tablespoon lemon juice 2 tablespoons kalamata olives, pitted and chopped
DIRECTIONS Preheat the oven to 375 degrees. In a small bowl, stir together the sun-dried tomatoes, olives and capers. Set aside. Place the tilapia fillets side by side in a baking dish. Drizzle with oil and lemon juice. Bake for 10 to 15 minutes in the preheated oven, until the fish flakes with a fork. When fish is done, top with the tomato mixture, and serve.

I like Tilapia a LOT but the two places by me only have fish raised in China. I won't buy that. Where are you getting yours from?
