Re: Mac and Cheese for baby recipe and ?
Why stay away from sharp cheeses? I've always given it to DS, he loves it!
This is my grandmother's mac and cheese recipe. Everyone loves it!
2 cans of Campbell's tomato soup 2 cans of 2% milk (use tomato soup can to measure) 1 box of Rigatoni noodles (Ronzoni tastes best) 1 lb of extra sharp cheddar cheese grated
Boil water and cook pasta. In seperate pot mix 2 cans of Campbell's tomato soup with 2 cans of 2% milk. Make cream of tomato soup. When soup is done, combine soup, drained noodles and 1 lb of extra sharp cheese that has been grated, and mix together in large casserole pan. Cover with tin foil and bake on 350 for about 25 minutes.
When done, take out of over, mix one more time and serve.
eta: This mac and cheese recipe is a meal in itself, we don't eat anything with it. It is liquidy, not clumpy like kraft mac and cheese.

who says stay away from sharp cheeses?
I make one for Luce with cabot seriously sharp cheddar and romano cheese. just sprinkle some italian breadcrumbs on top and bake til browned.
I don't shy away from strong flavors with Luce. he LOVES all cheeses..romano, parma, feta, provolone, cheddar, fontina, mozzarella...I give him everything!!!

I don't think this will work without the tomato soup...it gives it part of the flavor.

2 pats of butter, chopped onion - saute Add milk (enough to boil the pasta in) I have no idea, I just pour until it looks like enough - Cook the pasta until almost done, add the cheese until melted
pour into a pyrex, sprinkle w/ breadcrumb and bake for 1/2 hour

Re: Mac and Cheese for baby recipe and ?
I just made it for him this weekend - I grated a brick of cabot colby jack marble cheese, added to a saucepan with butter and milk, stirring constantly. Add the cheese slowly, stirring the whole way or it'll curdle. add some pepper to taste.
I also smash a can of chick peas and put that in, too.
i use barilla mini pastas - DS likes the farfalle
if you want to bake it, just top with some italian breadcrumbs.

Marisa, you cook the pasta in the milk??? that's interesting. I think I may try that rather than making a roux.

You're getting a cooking tip from ME ?????????? Yes, I cook it in the milk b/c I found when I made the roux it doesn't reheat well - not creamy enough .......

for him, right now I don't b/c I only make it with pastina. he doesn't like bigger pasta yet (unless it's ravioletti, which he loves. he's weird )
so, I just throw the cheese into the cooked pastina, usually with some mashed carrots.
adding the breadcrumb is just the ultimate.
you know, instead of tomato soup, my grandma would layer sliced tomatos on top of the breadcrumb. I wonder if that would be similar to neeners.....

the cream of tomato soup is what makes the liquid in the mac and cheese. (That and the soup mixing with the cheese).
So many of you put breadcrumbs on mac and cheese, I don't think that would go with mine either...but if anyone tries it and it's good, let me know.

That's really interesting - I may have to try that next time.
I always make it basically the same as the Fannie Farmer recipe. But I never use breadcrumbs.

now you can hitch a ride home on one of those flying pigs and avoid the whole LIRR mess
no, thank you. it's a great tip. makes total sense b/c it uses the starches in the pasta to bind. love it.
