Looking for menu ideas
I know this is SUPER early, but I like to plan ahead lol. I found out I am going to be hosting Christmas day here for just us (DH, DS and I) my parents and my MIL & FIL. In laws are vegetarians, my parents are total carnivores. I want to keep it pretty simple but delicious. We will be having a meal at my parents the following day (w/ other family who can't be there on Christmas) and we will have lamb, ham, etc. So, I am thinking:
-Mozzerella layered with roasted red peppers -Antipasto platter (olives, cheeses, artichoke hearts, salami, pepperoni, baguettes) -Baked clams
-Baked stuffed shells -Pot of meatballs -Garlic bread -Green mixed salad (probably baby lettuces with sliced cucumbers, grape tomatoes, croutons, balsamic dressing of some kind)
Should I also have some kind of eggplant dish? Any suggestions are very much appreciated!

i think you have a lot of food, but if you want another veg side dish, I've made Giada's vegetable parmesan a few times and it's delicious, and a nice switch from just eggplant, and also not as heavy as parmesan normally is. I skipped the fennel b/c i'm not a fan, used less mozzarella and more grated cheese and my own sauce. it's been delicious every time.
