Re: looking for a YUMMY guacamole recipe!

2 ripe avocados
1/2 red onion, minced (about 1/2 cup)
2 jalapeno peppers, stems and seeds removed, minced
2 tablespoons cilantro leaves, finely chopped
1 tablespoon of fresh lime or lemon juice
1/2 teaspoon coarse salt
1/2 teaspoon cumin
A dash of freshly grated black pepper
1/2 ripe tomato, seeds and pulp removed, chopped

Method
Cut avocados in half. Remove seed. Scoop out avacado from the peel, put in a mixing bowl.

Using a fork, mash the avocado.

Add the chopped onion, cilantro, lime or lemon, salt and pepper and mash some more. Add jalapeno and cumin.

Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Refrigerate until ready.

Just before serving, add the chopped tomato to the guacamole and mix.

3 ripe haas avocados
2 roma tomatoes
1 small onion
1/2 bunch of cilantro
1-2 cloves garlic
salt
lime
cayenne pepper (if desired)

I take the garlic cloves and put them in the food processor to mince, then add the onion to mince, then the cilantro. Next, I add the tomatoes.

I put the avocados in a bowl and then add in the tomato mixture and mix with a fork (which also helps to mash the avocados)We like is super chunky! Next I add salt (to taste) and lime (to taste)... usually it's about the juice of one lime. If you like it a little spicy, add in some cayenne pepper. That's it! Super simple and delicious... I always get raves!

I use the same recipe exactly exactly except that I use red onion (and only a quarter of it) and kosher salt which is a little coarser. Yummy!

This is exactly how we make ours (I trim the spines of the jalapeños and remove seeds to lessen the spice) but minus the garlic.

We have a house in Mexico and this is how our "neighbor" taught me.

Re: looking for a YUMMY guacamole recipe!

just putting mine up too. I just use about 3 haas avocados, 1 lime juiced and a tiny bit of red onion. I like seasalt to taste. I just keep cutting them in a big bowl until it's the perfect consistency for me. My new love to add to it is Chalula hot sauce. Deeelish! I omit the salt when I use the hot sauce.
