there are a lot of things to do with left over yarn
all the answers depend on how much you have left.
* make things for babies, their bodies are tiny * "scrap" blankets or scarves * put them in a pretty vase, once the vase is about full, it really does start to look pretty * stuff small scraps into glass christmas ornaments * modular knitting/crocheting (things like granny squares) * dish cloths/wash cloths * donate to someone who is working on one of the above projects * donate to charities (you'd be suprised how many will take scrap yarn) * make squares for warm up america * make cozies for cameras/ipods/cell phones * make amigurumis * use them as stuffing for dolls/amigurumis
if you want more ideas, head over to ravelry.com. they have groups dedicated to left over yarn knitting/crocheting
personally, i have a couple of vases. one has tiny scraps, one has small balls of yarn. they look nice in my craft room. i also donate a lot of my yarn to a) unemployed knitters on ravelry b) a home for mentally retarded adults (there are a few of them who know how to do things with yarn) c) my mom

I make scrap blankets (not too big) and donate them to the Little Shelter for the animals.

Okay, I would like to learn basic granny squares and just use up all of my yarn (have a quite a bit!) but I don't know where to begin. I know basic crocheting (chain, single, double, etc.) I recently made this scarf: Scarf

Right now, its just sitting in a drawer. But I do have all these grandiose plans for it. I have been making a square blanket with different colors in the middle and black trim. Only problem is that I felt it was missing certain colors, and had to go out and buy those colors, which only added to my extra yarn collection
The granny square is probably one of the simplest patterns, once you can get past the first few rounds. Here is a good tutorial, and I am happy to help if you get stuck!
