leftover pumpkin puree??
i made pumpkin spice oatmeal cookies from skinny taste and the recipe only calls for 6 tbsp. of pumpkin puree so i have almost a whole can leftover! any ideas on what i can whip up with it tonight???
i ran out of vanilla and oats so i can't make another batch of the cookies :(

Maybe not or tonight but I added my leftover puree to pancake mix and some cinnamon, came out great.

that is a great idea, I'm going to have some leftover from my pumpkin cheesecake and that is definitely what I will be doing with the leftovers now!!

I use leftover pumpkin to make pancakes all the time. Another thing are scones, which are quick and perfect foor breakfast.

Mix, bake!
She added chocolate chips. I frosted with cream cheese frosting.

Nope - just mix the pumpkin w/ cake mix.

I add it to oatmeal with brown sugar and cinn or nutmeg.
Not sure if you have a pet, but my vet said it's good for dogs. Sometimes I'll throw a tablespoon or so into his food.
Or - Pumpkin Pie Dip
8 ounce block of cream cheese, softened 1 cup pumpkin purée (canned) 1 teaspoon pumpkin pie spice 1 teaspoon vanilla 1-3 cups powdered sugar
1. Using an electric mixer, blend together cream cheese, pumpkin, pumpkin pie spice and vanilla until smooth. 2. One cup at a time, add in powdered sugar and blend until smooth, scraping down sides of the bowl with a rubber scraper. 3. Serve chilled with vanilla wafers, ginger snaps, animal crackers, apple slices...

Pumpkin cookies. Add the can to a box of spice cake, mix just the pumpkin and dry mix together. Add choco chips. Drop by teaspoon full onto ungreased cookie sheet. Bake at 350 for 11-13 minutes. Best cookies ever.

only note i would add: make sure you shape your cookie dough how you want the cookie to look. since there is no fat, there is no melting and spreading. they bake up in the same shape they were placed on the cookie sheet.

Yup....they don't look that pretty, but they don't last long enough for anyone to notice

pumpkin cream cheese! So delish- mix it w/ a brick of cream cheese, some pumpkin pie spice and sugar to taste! then spread on toast or English Muffins.

Pumpkin pizza - spread the puree on the dough as you would pizza sauce, top with chunks of goat cheese and bean sprouts.
