leftover mashed potatoes idea --samosa inspired!
I have enough leftover mashed potatoes to feed a small country. I mixed them with Indian spices (a mixture from Tastefully Simple), peas, mozzarella, and Parmesan cheese--made little patties, dipped them in egg and then a panko/breadcrumb/coconut/parmesan cheese mixture, and then fried them up. yum!

Sounds delicious! You can do the same with leftover mac & cheese for a little appetizer type fritter too!
