Does anyone know of opportunities over summer, winter, spring break vacations to travel abroad to learn another language?

I know a few teachers who have done the SUNY New Paltz Language Immersion Institute and have spoke highly about it.

What language are you interested in? The study abroad program that I went to in college also offers a summer program for teachers. It's in the south of France and it's BEAUTIFUL there! Plus, it's an awesome program!!!
