latkes
just curious as to how we all make them.
My MIL and I were discussing that some put in egg and some don't.
I do.

I do..recently used a new (to me) recipe from epicurious when I made them at school with the kids and everyone RAVED

we use eggs to make them. Potatoes chopped in the blender egg flour salt onion power or onion chopped super fine.
mix form into patties fry in oil

I've never heard of not using eggs as that is what holds it all together. I use matzoh meal instead of flour and a fresh grated onion. Love making them but hate the way my house smells after, LOL!

Us too.. matzoh meal is the traditional way. I find that flour makes them a bit cakey.
Must have eggs. DH says my latkes beat his mom's.
My house is stinky still. It will take a few weeks for that to do away no matter how much I clean.

eggs.... or get them from a Kosher deli. LOL! Try putting out bowls of vinegar, maybe that will take the stink out?...

I've made them with and without...the starch from the potatoes will hold them together....also, if you make them wiht cheese and no egg, the melted cheese will hold them together if you don't add eggs.....my preference with eggs.
