It Smells SOOO GOOD
I am making Pernil for dinner. It's been slow roasting for the last 2 hours. And my whole house smells insanely good.
What kinds of foods do you cook that smell so good your mouth starts watering before you even sit down to eat??

I have a pork belly joint to roast for our sunday dinner, I can't wait to get that bad boy started tomorrow!!!

I have a pork belly joint to roast for our sunday dinner, I can't wait to get that bad boy started tomorrow!!!
Pernil is pork shoulder. I cut deep slits all over the meat. Then I make a paste of garlic, oregano, salt, pepper, vinegar and orange juice, rub it on the pork so it gets IN the little slits and marinate overnight. The next day I stuff garlic cloves in the slits, cover with foil and slow roast for about 3 hours covered and an hour and a half uncovered. Just until the meat is cooked and the fat is crisp. I am serving it with red beans and rice - and acorn squash.
I have never had pork belly joint?? Is the meat different? More tender?

That sounds good! Pork Belly is a quite fatty cut, however if its slow cooked in the oven for hours, the crackling (skin, which is considered a HUGE delicacy here, but I haven't seen anyone eat it in the states) is super bubbly and crisp, and the meat is tender and juicy because the fat all drips away. Delish! Going to do it traditional British roast style served with carrots, parsnips, and roast potatoes! Can't wait!

^^That's one of the BEST parts of the pork! The shoulder is super fatty too and we slow roast it specifically to get the crackling! Yummmm!

Oh Boy! Pernil sounds great. I may have to try that.
I would say roasting a turkey, chicken soup, sauce, short ribs.
