DS is one month old and for the first time hasn't pooped in over 8 hours. He usually has at least one dirty diaper every 2-3 hours. Is this normal? Do they start pooping less as they get older or is something wrong?

At that age, my DD would go once a day or once every other day. Are you EBF? With EBF babies, it's normal to poop after every feeding or to poop once a week, or anything in between.
ETA: by the time he's a month old, you don't need to worry about counting diapers anymore. It's such a habit because you do it their first few weeks, but really, now you can just relax. I used to keep a feeding / diaper / sleeping log until DD was 5 months old and I really regret all the extra time of my day devoted to counting how many minutes of BFing related to how many poops and how much sleep, etc. There's no rhyme or reason. The baby will do what it needs to do.

Totally normal. DD only pooped once a week at that age.

My DS pooped every other day in the beginning and soemtimes he would go even less. My ped said its all normal. That they are more concerend about the consistency of the poop. As long as its soft.

Yup, totally normal. DS would poop every other day. As long as the poops are still soft and not small pebbles, you're good.
