If you've been to Niagara / Toronto--
How many days will we need, including travel (driving to & from)? We want to do a lot of the touristy stuff (Maid of the Mist, Hockey Hall of Fame, etc.)

I've done this trip several times. I'd say drive up to Niagara and stay there overnight. It's around 7-8 hours to get there and if you leave early enough, you have the afternoon, evening, and next morning at Niagara. That should be enough time there. From the Falls, it's approx. 2 hours to Toronto.
Hockey Hall of Fame has a lot of exhibits and interactive activities so I'd say about 3-4 hours, maybe more depending on if you are big hockey fans or not. I believe they stamp your hand so if you want to leave and go to lunch and then come back, you can do so.
Also in Toronto, see the CN Tower and the glass floor! The views are beautiful!
I've done this trip from a Thursday-Monday including traveling but I've also done it from Thurs-Sunday or Friday-Monday.
I love Toronto! I've been there about 4 times!

we stayed in niagara falls in clifton hill. we did maid in the mist...just beautiful. we did a winery in niagara falls. one day we took a tour of the blue jays stayed then went to the hockey hall of fame. we did the wayne gretzky winery. have lots of fun when u go. we also did the bird kingdom in niagara falls

Thank you both for the suggestions, I've never been there & am looking forward to seeing all these things.....
So you think 4 days (in total) would be enough? (Trying to figure out if I can do this over a 4-day weekend)

4 days should be plenty. We did 5 or 6 and were bored with Toronto after day 2.

We drove there and spent about 4 days, but only at Niagara, not Toronto. But we were able to do most of the touristy stuff in about a day. You can buy a pass at the tourist center that, from what I remember includes access to the main 4 attractions. I know one was Maid of the Mist, and another was going behind the Falls. I think one was some indoor "3D" imax thing that splashes you, which we only did since it was included in the pass. We did all that in one day. We spent the other days we were there doing things like a wine country tour and going to a butterfly conservatory which is part of a nice botanical garden. But if you just want to see the main attractions you could definitely get it all in in a day or so. It's really pretty by the falls, you will love it! Oh, I think they also do fireworks above the falls a couple times a week during the summer. If you look it up online you can find out the dates. Call or email me if you need more info. I have pics of our trip on facebook if you're interested.
ETA: it took us about 10 hours to drive there, but we took the "scenic" route and had a ton of traffic getting through the Bronx. It would probably be much quicker for you since it will be easy to get right to the bridge, and just stick to the main highway.
