ideas for side dish for BBQ
our friend is having a memorial day BBQ. its kind of an agreement with our group that the host buys the meats and rolls, etc... and everyone brings a side dish or dessert or something.
so i'm trying to think of a side that i could take- preferably something that doesnt' need to be heated up so i don't have to use his oven when we get there...

potato salad
a cold pasta salad (I use the McCormick salad supreme seasoning or you could use just plain italian dressing)
a fruit salad
a veggie/dip platter

sliced fresh mozzarella & tomato w/basil, oil & balsamic vinegar
grilled eggplant or veggies (served room temp)
shrimp cocktail
dessert - cookies, cake, cupcakes, trifle, etc etc

At BBQ's not everyone likes to sit down with a plate of food. What I like to do is serve food on skewers...
Watermelon, cantaloupe, strawberries
Cherry tomatoes, Mozz balls, Basil - Drizzle with a little EVOO and Balsamic
Zucchini, mushrooms, eggplant. Brush with a little olive oil (you can grill them there)

ooh! i think this is what we might do! i had been thinking about making this as a salad... but i love the idea of serving it on skewers!... makes it a little more "unique"
