There's always a first time for everything Chat Icon . If you're going to stuff it, make sure you do so right before putting the bird in the oven - never stuff it hours before or overnight as this can cause bacteria from the raw meat into the stuffing! Clean the turkey inside as well as out. Dry with paper towels, especially well inside the cavity. I use my hands to stuff it. Do not over pack it tightly add enough that it fills it. I leave a mound of it on the outside of the cavity where it gets nice and crispy.

Dh and I bought this stuffing container thing from BBB -- cost about $10. It is like this wire mesh "cage" that you put the stuffing inside, then shove it inside the turkey, and then when cooking is done you just pull the cage out and dump it into a bowl.

Another first timer here - my friend said she puts the stuffing in just for the last hour of the turkey being cooked.

For some reason, I thought you put it in when you FIRST put in the turkey.

What's the right way?

Since we are having so many people I am going to make it in and out of the turkey, so I don't "over stuff".

Anyone using italian bread?

I think it's good to make the stuffing separately to be honest... you can just stuff the turkey with aromatics like halved lemon, sprigs of rosemary or thyme, etc.

I agree! Stuffing alone doesn't take all that long to make - so I add some of the pan drippings to the stuffing mixture before cooking to give a little of the flavor.

I prefer to make mine separately too. I also use some of the cooked turkey drippings to make the stuffing. It is one of the last things I make before serving dinner.
