How do YOU make meatloaf?

I am making meatloaf tonite, I bought the "meatlof mix" which is pork, veal, and beef. I add breadctumbs, egg, some fresh grated peccorino romano, a little ketchup, and a little wochersire (sp?), fresh parsley.

This is how my mom makes it and it is essentially a big meatball Chat Icon

My aunt adds a little mozz cheese down the middle..I might do this tonite.

How do you make your meatloaf? I am wondering if I should switch it up....Chat Icon

I usually make it with turkey to be healthier and I grate onions and garlic and add those into ground turkey, some breadcrumbs, eggs, and barbeque sauce. The sauce keeps it moist since turkey tends to be dry. I usually brush some bbq sauce over the top when it's almost done to give it a bit of a glaze.

Growing up, my mom always put mashed potatoes sprinkled with paprika over her meatloaf. I always loved it that way too.

I do ground beef - or veal, beef, pork - and add breadcrumbs, egg, onion, garlic, salt, pepper and ketchup. Sometimes I'll throw in a splash of worcestershire and/or hot sauce. Sometimes I use Luger's sauce instead of Ketchup (thanks Ophelia for turning me on to that sauce!). Sometimes I use cocktail sauce instead of ketchup.

Last time I made it I did KateDevine's recipe with Barbecue Sauce .. it was fantastic!

My mom & I also basically make a giant meatball.. same recipe as our meatballs, which is basically how you listed above but minus the ketchup & wochersire (sp?). I add a little tomato sauce in the meat and mozzarella through the middle and top with a layer of tomato sauce and chopped onion Chat Icon

when we don't feel like waiting an hour for dinner, we use muffin pans and make mini meatloaves. i just get ground beef, throw in a chopped onion, garlic powder, Worcestershire sauce, ketchup or tomato sauce, chopped garlic, oregano or parsley, egg, breadcrumbs and pecorrino romano or i just throw in a onion soup mix and cook it for 15 minutes in the muffin pans.

I used the meatloaf mix or even just ground beef and then add a piece of bread soaked in an egg(in lieu of breadcrumbs- makes it moister). Then I add ketchup, whostershire sauce(SP?)_ salt, pepper, chopped onions, green and red peppers and a packet of onion soup mix.

2 lbs. ground beef
1 small onion, grated
2 cloves garlic, minced
1 packet dry onion soup mix
Worcestershire, as much as you like
Soy sauce, as much as you like
1 egg
1 cup breadcrumbs
Italian seasoning
Chopped fresh parsley
1 carrot, grated
Squirt of ketchup
Grated parm cheese

Make a glaze of equal parts ketchup and brown sugar and set aside.

Combine all ingredients till mixed and shape into a loaf on a cookie sheet. Cover w/foil and bake at 350 for 20 minutes, take foil off and brush with glaze. Let cook an additional 25 minutes.

This is SUCH a savory meatloaf!!!

I make turkey meatloaf using the McCormick meatloaf packet...my husband likes it a lot! It doesn't taste like a big meatball...it has lots of spices, etc. in it that aren't typically in meatballs.

Meatloaf mix, breadcrumbs, one egg, Lipton onion soup packet, the same onion soup packet filled up with water, ketchup or BBQ sauce.

i make it with spinach, ground turkey and cheese.

1 lb ground beef or turkey
1 box frozen spinach thawed; squeeze out extra water
1 large onion finely chopped in food processor
2 large peeled tomatoes chopped or small can of diced tomatoes not seasoned (Del Monte)
2 envelopes of Sazon Goya seasoning
1 cup of grated cheese
A pinch or so of paprika
Pepper
If no cheese, add salt
Bread crumbs, either seasoned or plain

Pre-heat oven to 400*

Mix everything, except bread crumbs, in a bowl

Put in 13 by 9 pan. Sprinkle bread crumbs on top. Cook for about one hour.

Mine takes some time to prepare because I have a 34 year old picky eater on my handsChat Icon

I steam about 3 large carrots or 1/2 bag of the baby carrots (the small bags)

While the carrots are steaming I saute half an onion and 1 package of sliced mushrooms.

Once those are done I puree them.

So to my meatloaf mix I add:
1 egg
about 1/4 cup of tomato sauce (I use Francesco Rinaldi Original)
I guess about 1/2 cup of the puree
1 package of Lipton mushroom onion soup mix
1/4 of grated parmesan cheese
I guess 1/2 cup of bread crumbs

I took the recipe from my MIL but changed it up a little bit. I use to just chop the veggies really really small and they were raw when I added them to the mix but one day I bored and I tried it this way and it gives it a different taste and I really like it a lot better.
