How do you do your roaster chicken?
I want to make one tonight but i always make it the same, i want to try something different....

This one's pretty yummy. You coat the chicken in lots of seasoning and put it in the fridge for a few hours. Then cook over a really low heat. Recently my favorite is to create a season mix of salt, granulated garlic, pepper and paprika. I rub it under the skin and then put a few pats of butter in there too. I sprinkle a little seasoning on the top of the skin and add chopped fresh herbs (thyme and rosemary). Lay it in the roasting pan on top of a bed of sliced white onions and Lemons. Stuff with lemon halves and a bouquet garni and truss it up. Roast.

I use a mix of canola oil and italian seasoning, s&p - season inside and out and I stuff it with onions, garlic and lemon...
